Yield: 4 servings

3 c Cooked rice
1 tb Fresh lemon juice
2 c Coarsely diced cooked chicken
1/2 c Chopped salted cashew nuts
3/4 c Salad dressing or mayonnaise
1/2 c Diced celery
Salt and pepper
2 Green onions, chopped
Salad greens

Combine rice, chicken, celery, onion, lemon juice and nuts. Add salad dressing and mix lightly. Season to taste with salt and pepper. Chill, and serve on salad greens.
