Chicken and Cortland Apple Couscous

Yield: 4 servings
2 c Coarsely chopped cooked -chicken
1/4 c Unsalted butter, but into small pieces
2 c Dry couscous
2 1/2 c Boiling chicken stock
1/2 ts G round coriander seeds
1/2 c Golden raisins
1/4 ts Ground cinnamon
1/2 c Toasted slivered almonds
1/8 ts Ground cloves
2 Cortland apples, peeled, cored and coarsely choppedPreheat oven to 400F. Combine all ingredients in a 9x13x2 inch glass baking pan. Cover with foil and bake for 25 minutes.
Serves 4.
