Yield: 4 servings

1/2 c Taco sauce
1/4 c Dijon mustard
2 tb Butter or margarine
2 tb Fresh lime juice
6 tb Plain yogurt
3 Whole chicken breasts, -skinned and split 
6 sl Of lime
Fresh coriander or parsley, for garnish

1. In a large bowl, combine taco sauce, mustard, and lime juice. Add chicken breasts and marinade at room temperature for 30 minutes. Remove chicken reserve marinade.

2. In a large frying pan, melt butter over medium heat. Add chicken breasts and cook 3 to 5 minutes a side, until lightly browned. Add marinade to pan and cook, turning chicken once or twice, until fork tender. Remove to a warm platter.

3. Raise heat to high and boil marinade 1 minute. Pour over chicken. Top each chicken breast with 1 tablespoon yogurt and a slice of lime. Garnish with coriander.

Makes 4 servings.
