Chicken/turkey and Mushrooms Parmesan

1 lb Boned chicken or turkey breasts cut into strips
2 tb Dry sherry
wine
1 c Sliced mushrooms
1/4 c Chopped onion
1/2 c Sliced red or
green pepper
bell 2 tb Oil
10 3/4 oz Can condensed cream of mushroom soup

1/4
c Grated Parmesan cheese
1 Bag Minute Rice Boil in Bag rice, cooked
1/4
c Water
Cook and stir chicken and onion in hot oil in a skillet until chicken is lightly browned and onion is tender. Stir in soup, water and wine. Add mushrooms, peppers and cheese. Bring to a boil. Reduce heat cover and simmer 10 minutes, stirring occasionally. Serve over rice. Top with additional cheese, if desired.
