Chicken Mushroom Saute

Yield: 4 servings
1/2 lb Mushrooms
3 tb Olive oil
4 Chicken breast
halves,boned and skinned
1 tb Minced green onion
1 lb Tomatoes,peeled
and chopped (drained,if canned)
1/2 c Flour
Salt and pepper to
taste
1 ts Dried tarragon
Clean and slice mushrooms. Set aside. Coat chicken
breast all over with flour a
nd shake off excess. Season with salt and pepper. Heat olive oil in
a large skillet. Add chicken breasts and brown on both sides. Remove and
set aside. Add onions and cook over high heat 1 to 2 minutes or until
tender. Add mushrooms. Stir rapidly, still cooking over high heat, about 2
minutes. Add tomatoes and tarragon. Place chicken on top and simmer 12 to
15 minutes. Add water or chicken broth, if necessary to make a sauce. Serve
with rice or noodles and green beans.
